An unpasteurised sheep’s milk cheese with a golden orange outer rind and firm consistency. Flavour profiles tend to change throughout the year from fresh and fruity to creamy and sweet, and an acidic tang gives the cheese a complex, long-lasting taste.
History/ Provenance
The Fletcher family have farmed the land at Ram Hall Farm, part of the Berkswell Estate, since 1881. Three generations currently farm the land. Berkswell cheese was created in 1989 in response to a request from a farm shop to supply them with cheese. Throughout the past 30 years the cheese has developed and the flock of ewes has grown from 35 to 850. Berkswell cheese is totally hand made up to 6 days a week, using only the milk from ewes born and bred on the farm. The ewes lamb in winter, spring and autumn meaning milk is produced for 12 months of the year. Moulds are left in colanders giving the cheese a unique and distinctive barrel shape.
Pairing Suggestion
Accompany the cheese with a mature Spanish red, especially Rioja. Alternatively, pair with a sherry or aged Tawny Port.
