LoCol Stuffed Mushrooms

 

4 large capped mushrooms

65gms LoCol, grated

50gms lean cooked ham, chopped

1 small onion, finely chopped

Handful fresh spinach

1 glove garlic, finely chopped

Teaspoon each olive oil and low fat spread

Salt and pepper to taste

 

Oven 220C/200C fan/Gas No7

You will need a lidded saucepan and a baking tray

 

1. Peel the mushrooms and remove stalk. Slice a sliver off the top each mushroom to give them a firm base. Chop the slivered top and the stalk. Place the mushrooms onto the baking tray.

2. Gently fry the onion in the olive oil for 5-7 minutes.

3. Add the low fat spread, the chopped mushroom stalks, slivered tops and garlic to the saucepan and gently fry, covered, for 5 minutes.

4. Add the spinach, cover and allow to wilt for one minute.

5. Remove from heat and add the chopped ham. Season. Mix well.

6. Spoon the mixture equally between the four mushrooms and sprinkle the grated LoCol on top.

7. Cook in centre of oven for 10 minutes.

8. Serve with salad.
