An Indian style cooking cheese made from pasteurised cow s milk, similar to pressed Ricotta except for a drier curd. The cheese is most common in South Asian cuisine, lightly coated in a mild marinade such as Tikka spice and Chilli Ginger and Lime to give exceptional authentic flavours and fragrances. Paneer is one of the primary protein sources among Buddhists who adhere to vegetarian diets.
