 A hard Italian rough-cut cheese with a distinctive mature, rich and fruity taste and complex, long lasting flavour. The texture is close and even with a granular crunch of salt crystals. 

 

Provenance

Colla SpA is 100% family owned and managed, starting production in 1921 in a small dairy in Cadeo, in the province of Piacenza. The milk comes from farms situated in the province of Piacenza, bordering the dairies of ​​Parmigiano Reggiano. Over decades and generations, Colla has continuously increased the production of Parmigiano Reggiano and is today highly ranked among the top 3 leading Italian companies. Colla cheeses are the result of a historical selection of the best dairies in the territories of Grana Padano and Parmigiano Reggiano, selecting from only 49 of around 150 dairies available.
