Cream of Capriccio and Chestnuts with Grape Jelly

This delightful dessert features layers of muesli, cheese cream, and homemade grape jelly in elegant individual glasses, garnished with crumbled chestnuts for added texture and flavour.

Method

1.

Cook sugar, water, and grapes in a saucepan over medium heat for about 10 minutes.

2.

Add warm wine to the pan and continue to cook for a few more minutes.

3.

Pass the mixture through a vegetable mill and allow the jelly to cool.

4.

Combine all ingredients for the cream until smooth and evenly mixed.

5.

To serve, place a teaspoon of muesli at the bottom of each glass.

6.

Add a spoonful of the cheese cream on top of the muesli.

7.

Carefully add a thin layer of the cooled jelly over the cream.

8.

Garnish with roughly crumbled chestnuts on top.

1.2L Zymè passito wine

60g grapes

30g sugar

3tbsps water

100g chestnuts, boiled and blended with a mixer

100g Capriccio cheese

130ml fresh cream

20ml rum

1 tbsp icing sugar

120g muesli

6-8 boiled chestnuts
