Our Maple baked BBQ Beans with cheddar can be baked in a deep frying pan on the BBQ, or on the hob and are a great side dish to make early and reheat when you need them. This recipe uses a Davidstow Vintage Cheddar Cobble (but you may substitute to another Vintage Cheddar,) which is a beautifully aged cheddar with an intensely strong flavour including both sweet and savoury notes and deliciously crumbly texture.

Method

Drizzle oil into pan, and turn to a medium heat, saute smoked sausage, onion and garlic together until browned.

Add in paprika, tomato puree, mustard and vinegar and cook for a further two minutes. Then add maple syrup, butter beans, chicken stock and season with salt and pepper. Bring to the boil, cover with a lid and turn the heat down, simmer for half an hour.

Now the sauce has thickened, if you’re serving immediately, then stir in the grated cheddar and you’re done! If you’re serving later then put the pan to one side and stir in cheddar just before reheating.

200g (or more) Vintage Cheddar

400g Butter beans

160g Smoked sausage sliced

1 onion, finely sliced

3 garlic cloves, chopped

2 tbsp tomato puree

1 tbsp Dijon mustard

1 tbsp vinegar

2 tbsp maple syrup

280ml chicken stock

1 tsp smoked paprika

Salt and Pepper to taste
