Yakitori Oumi and Chicken Skewers with Stir Fry

This Yakitori Chicken and Oumi skewer is a delicious and unique take on your typical BBQ Skewers.

If you’re vegetarian and wanting to try this dish, then simply substitute the chicken breast for mushrooms, the mushrooms will absorb the flavour of the sauce so well making them extra tasty. This recipe uses Oumi, a melt-in-your-mouth grilling cheese and a great alternative to the traditional Cypriot Halloumi.

Method

1.

If using wooden skewers, soak in water to prevent food sticking when cooked.

Thread chicken, Oumi and green pepper onto the skewers

3.

Drizzle with yakitori sauce, reserving half for stir frying vegetables

4.

Grill skewers on the BBQ or on a griddle pan, then set aside

5.

Stir fry sweetcorn and mushrooms in oil for 5 minutes

6.

Stir in yakitori sauce and cook for a further 2 minutes

7.

Then add the beansprouts and noodles and cook for another 2-3 minutes

8.

Serve stir fry in a dish and top with fresh chillis and spring onions and serve with skewer

Ingredients

400g Oumi, cut into 1 inch cubes

200g yakitori sauce (make your own if you want, we got ready made sauce!)

300g ready to cook egg noodles

130g baby sweetcorn, chopped

3 spring onions, chopped

1 green pepper, cut into 1 inch squares

100g mushrooms, sliced

Handful of bean sprouts

3 chicken breasts, cut into 1 inch cubes

1 or 2 sliced red chilli peppers
